I’ve served these Rainbow Gummy Tequila Pops at every summer gathering for the past three years


Ingredients

Units Scale
  • 1 cup tequila (silver/blanco works best)
  • 1 cup water
  • 1 cup sugar
  • 1 packet (3 oz) flavored gelatin (any color)
  • 1 cup gummy candies (various colors)
  • 1/2 cup lime juice
  • 1/2 cup lemon juice
  • 1/2 cup orange juice
  • Ice pop molds
  • Wooden sticks

Instructions

  • In a saucepan, combine water and sugar over medium heat. Stir until the sugar is completely dissolved.
  • Remove from heat and add the flavored gelatin. Mix until fully dissolved.
  • Stir in the tequila, lime juice, lemon juice, and orange juice until well blended.
  • Pour a small amount of the mixture into the bottom of each ice pop mold, filling them about one-third full.
  • Place the molds in the freezer for about 30 minutes, or until the first layer is set but not completely frozen.
  • Once the first layer is set, add a layer of gummy candies on top of each mold.
  • Pour more of the gelatin mixture over the gummy candies, filling the molds nearly to the top.
  • Insert wooden sticks into the molds and return them to the freezer for at least 4 hours or until fully frozen.
  • To remove the pops from the molds, run warm water over the outside of the molds for a few seconds.
